On my last trip to Charleston, my friend and baker Katherine Frankstone shared her Grey Ghost Bakery lemon sugar cookies with me. Mind you, these cookies are a new invention – and they are award winning, for good reason. With just enough crisp to make a nice crunch when you first bite into them and a tender-soft center, these lemon sugar cookies are perfect all by themselves. Pair them with a good cup of tea and you have a really satisfying treat.
I decided recently that these cookies would star in an impromptu dessert. To create a cheesecake-flavored topping, I blended light cream cheese, confectioner’s sugar, a bit of orange zest and a dash of vanilla. When the sweetness was just right, I spread some of the mixture on each cookie and topped with fresh berries. Two minutes later, an elegant lemony dessert was being quickly consumed by my dinner companions – really fast, I might add.
Grey Ghost Bakery’s lemon sugar cookies are “Hand-topped with pearlized sugar and baked with candied lemon zest.” And just a few months ago, this recipe received 2014 SOFI Award finalist recognition for Outstanding Cookie by the Specialty Food Association.
