I’ll admit it. The pan intrigued me. For about $35 from major culinary retailers like Williams Sonoma and Sur la Table, you, too, can buy an ebelskiver pan that makes seven in one batch.
What does it do? It gives you an awesome way to make ball-shaped pancakes, stuffed with gooey, wonderful fillings.
Here, I’ve used pancake batter (whatever your favorite might be), and filled them with strawberry jam. Cooked in a pan pre-loaded with hot, melted butter and topped by confectioners sugar – breakfast perfection.
Substitution note: Make the pancake batter savory by adding 1 Tablespoon of mixed green herbs and a hint of roasted garlic. Fill with softened goat cheese and cook until brown on each side. Serve with balsamic vinegar glaze for dipping.
Big hint: When you use an ebelskiver pan, use chopsticks or skewers to turn the pancake spheres while cooking.
