A New Orleans girl at heart, my sister-in-law Lori grew up eating the “vegetable pear,” or merliton. In Costa Rica it’s called a chayote.
As Lori says, “My Grandmother Diettel would make a merliton and shrimp casserole. A lot of people in New Orleans make it kind of like a stuffing or dressing.”
