Great reductions take time to prepare. A busy chef’s pantry should include some quick substitutions for those times that cooking from scratch isn’t an option.
Balsamic glaze is a fabulous addition to your pantry. Add a few drops to a plated dish, zig-zag over grilled pork or chicken, drizzle over fresh buffalo mozzarella and sliced heirloom tomatoes.
In my pantry right now: Modenaceti Balsamic Glaze, about $6 from Fresh Market. I’ve also tried Blaze, which is slightly more expensive, but excellent. Try this refreshing dessert – ripe nectarines, sliced just right and drizzled with your favorite balsamic glaze. Finish with a snifter of tawny port and you’ve got the recipe for a perfect evening.
